You can't choose your water supplier — but you do need to open an account and submit a reading.
Overview
Water is the simplest move-in utility: your supplier is fixed by the region you live in, so there's no shopping around. You tell the regional water company you've moved in, open an account, and submit an opening meter reading if the property is metered. It's low-effort but easy to forget in the rush of a move.

If you delay
